The power information panel is confusing, but once you understand it... it makes perfect sense. In short, Steam Engines don't produce more than what is needed, thus the production is not at 100%. Nice guide. I notice you mention burner inserters, but don't show a screenshot on how to make use of them in fueling coal drills. I've seen quite a few YouTube Let's Plays where people get confused on how to do this. I suggest adding this screenshot:

Personally, I don't like smelting on-site. What happens when your ore field runs dry? You have a lot more stuff to move and setup at your new location.
